baked zucchini

We love zucchini in the summer! This is one of our favorite ways to eat zucchini:

Baked Zucchini

Wash and slice a large zucchini into circles. Pour 1-2 Tbs. olive oil in a baking dish and toss zucchini to coat. Distribute slices evenly in dish and top with garlic powder, dried minced onion and Parmesan cheese. Bake at 400° until browned.

  1. After many, MANY years of growing zucchini, I have discovered that they store much longer in the fridge, if they are just put into the crisper drawer as is — NOT in a plastic bag! :+) Try it!

    • I agree! Even if I only use half of a zucchini, I refrigerate the remainder as-is. It forms a sort of scab over the cut area and the rest stays fresh for a while. Then I just slice off the thin scab and use the rest. Thanks for the great tip! :)
